Chai Smoothie

When my sister lived in Boulder, CO, one of my favorite places to eat when visiting her was Rush Bowl. Located in a tiny storefront on the Hill and always teeming with college students, this place blended up the most delicious smoothie bowls topped with buttery, crunchy granola. It was so fun to get a bowl and walk around the neighborhood or find a bench nearby to people-watch. My favorite was a chai flavored creation, and since I don’t have a good excuse to go to Boulder anymore, I created a version to make at home. I usually eat this as an afternoon snack, but it would make a great breakfast too.
